Vattayappam is a steamed rice cake made of fermented yeast batter a perfect subtly sweet spongy better than Bakery made. It is a popular Keralite tea time snack and it is naturally gluten free and vegan. Today we will make a soft vattayappam without grinding the rice flour.
Ingredients
- Rice flour – 1 cup
- Water
- Rice – ¼ cup
- Grated coconut – ½ cup
- Salt – one pinch
- sugar – 5 tbsp
- Yeast – 1 teaspoon
How to make
- Take two cups of rice flour in a bowl
- Adf water and make a smooth soft batter.
- Take ½ cup of rice and ½ grated coconut in a mixie jar and add 1 teaspoon salt, 5 tablespoon sugar
- The smooth, soft flour added to this paste.
- Add 2 tbsp of water and 1 tablespoon of yeast, mix well and grind.
- Take this flour into a bowl and add water, loose the flour and grind again.
- Grease the stainless steel flat plate mould with ghee or butter and pour the batter to the plate.
- Steam and cook for 10 to 15 minutes.
- Remove from the steamer and open lid to avoid moisture and allow the vattayappam to cool..
- Cut into wedges and serve as snacks or breakfast.
